I run a winery and vineyard near Thuir. I operate on the New World model where I charge a small fee for a tasting (€3). If you don't like the wine you have contributed something so are under no obligation. If you do buy wine I don't charge the €3.

To date I've never actually charged anyone!

It's not the norm and I have been obliged to buy a bottle or two of wine I don't like. I would rather have paid for the tasting.

come along to Les Estivales in Montpellier each Friday evening over the Summer.. you pay Euro3 a plate of tapas... and Euro3 a glass (you take glass home) with 3 glasses of wine... which are explained to you at the bar... you can then go to the market stall and buy your wine if you wish...
