Making a will re: French property

4 years ago we bought a holiday home in Herault. We've been concerned about succession rights and have been advised to make a French will to cover this property. We tried contacting the notaire who handled the original sale, but we've had no response from him.
We're looking for advice on 3 counts:
1. What is the situation re: succession on death of a spouse/
2. Can anyone recommend a good notaire ( and one who understands English, preferably) in the Beziers, Agde region, who'll do this work?
3. How much should we expect to pay for this service?
We're coming over the end of the month and would like to sort this out.
Any help will be greatly appreciated.
