It isn’t every meal that one wants and gets a great wine, such as Chateau de Peyriac, to savour and remember. It would be completely swamped by pasta with a putanesca sauce, for instance.

Languedoc has wines for these occasions too: my favourite is the Cabernet Sauvignon (Vin de Pays d’Oc) from Roche Mazet. It’s available in the normal 750ml bottle but also, conveniently, in a collapsible nylon pack of three litres costing £7 – that’s £1.75 a bottle!

When the temperature’s nudging 30C the freshness of the Cabernet is ideal.

Another good one is the Merlot of Cuvee 178. Merlot is heavier and fruitier than the Cabernet, perfect for winter evenings and at £6 for three litres you can afford to cook with it as well!

Even lower in price are a number of nylon pack wines in 2, 3 or 5 litres. Perfect for cooking. Try chopping a Chorizo into thin slices, covering it with this red wine, and simmering it slowly down to nothing.
